I got a couple messages about my raw cucumber pasta recipe, so I thought I’d post a draft here. To be honest, I’m not a big recipe-follower, I see an idea and I try to replicate in my own improvised sort of way. :)
Cherry Tomato Sauce:
- 2 cups cherry tomatoes
- 1 chopped red bell pepper
- 1 chopped yellow bell pepper
- 3 stalks green onions chopped
- 2 cloves garlic minced
- 1 cup fresh basil leaves
- 1 spring oregano
- 1 1/2 tablespoons olive oil
Put all ingredients into a food processor and blend. It’s better if you leave a few chunks in for this recipe. :)
Raw Cucumber Noodles:
- 2 large cucumbers
- bell peppers (*optional)
It’s really best if you have a spiralizer for this, but if you’re like me and don’t happen to own one, you can peel the cucumbers with a knife or veggie peeler. I also sliced a few red and yellow bell peppers thin to add a bit of colour to the bowl, but that’s totally up to you.

I seem to have inspired/convinced/tricked my new guy to do five days of raw food. I am not entirely sure how this happened (there was mucho alcohol involved and lots of diet debating) but he’s pretty gung-ho about it. His motivation comes from wanting to lose a couple lbs and not so keen on the animal rights front, but regardless I am absolutely thrilled that he’s even taken an interest in the veg*n ranting and raving I do. In light of his sudden interest and support, and the fact that I’ve put on some poundage as well over the past couple months, I’m going high-carb raw-vegan for the next five days as well. Time to bust out the juicer again! :)
